My mother makes this FANTASTIC broccoli casserole that get devoured every time she makes it. The best part about it is, it’s so simple to make!
Take my advice…make a double batch! There are never any leftovers!
The Recipe
2 boxes frozen chopped broccoli
½ stick butter, cubed
8 ounces Velveeta, cubed
1 sleeve Ritz crackers, crushed
1 stick butter, melted
Preheat oven to 350 degrees. Cook broccoli according to package directions. Drain liquid from the broccoli and transfer to a round casserole dish. Dot broccoli with cubed butter and cheese. Mix crushed crackers with melted butter and cover broccoli mixture. Bake for 30 minutes or until cheese is bubbly.
SUGGESTION: You can assemble this dish a day or so ahead of time and store, covered, in the fridge until ready to bake.

My family loves, loves, loves this side dish! It goes perfectly with my Italian Pot Roast too! This is one of those cheesy, crunchy, comfort foods! Enjoy!

This looks fabulous! I always have trouble finding Velveeta in the grocery store. I can only ever seem to find the Velveeta slices, not the block of Velveeta.
Christina — I would use the slices if you can find those. Just make sure you have the right amount by weight. I don’t think the shape of the cheese matters since it melts.
I love recipes that are easy yet super delicious! My grandmother made something almost identical to this and it’s been years since I’ve had it. I’ll definitely make this soon.
This would make a wonderful side dish for Thanksgiving. I don’t think anyone could pass up something cheesy.
