One of my son’s favorite meals is grilled cheese. As I was making his grilled cheese today, I thought I would try some new flavor combinations. Here’s what I did:
1 Tbsp mayo
1 Tbsp Dijon mustard
1/4 Gruyere cheese, grated (Swiss would be another great option!)
4 slices deli ham
8 slices of bread
Combine mayo and mustard in a small bowl. Spread evenly on each slice of bread. Top four slices of bread (on the mustard/mayo side) with one slice of ham and 1/4 of the cheese. Top with remaining bread (mustard/mayo side down). Repeat for remaining three sandwiches. Butter the outside of each sandwich (both sides) and grill until golden.
8 tsp pesto
4 slices Provolone cheese
4 slices roasted red peppers, patted dry (tomatoes also be great!)
Spread two tsp of pesto evenly on four slices of bread. Place one slice of cheese and one roasted red pepper on top of pesto. Top with another slice of bread. Repeat for remaining three sandwiches. Butter the outside of each sandwich (both sides) and grill until golden.
Each recipe makes four sandwiches.
