I love cinnamon. And, any recipe that starts with the word “cinnamon” grabs my attention. I’ve been looking for a good scone recipe. One that wasn’t too dry or too complicated to make. When I came across this recipe, it seemed just right.
2 cups flour
1/2 cup brown sugar
1 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
1/4 cup butter
1 cup cinnamon chips
3/4 cup half and half
1 tsp vanilla
Combine first five ingredients in a large bowl. Cut in the butter until the mixture forms pea sized pieces. Stir in cinnamon chips. In a separate bowl, whisk together the last three ingredients. Stir the wet ingredients into the dry ingredients. The mixture will be somewhat wet.
Scoop onto parchment lined baking sheet. Bake at 375 degrees for 20 minutes.
Is it a Keeper?
Holy cow was this recipe easy. I was a little surprised by how wet the dough was. When I’ve made scones in the past, I was able to form the dough into a disk and then cut it into the tradition triangle pieces. That was not happening with this “dough”.
I ended up using my large Pampered Chef scooper to portion the dough. One scoop made the perfect size. I also topped my scones with some crystalized sugar.
The recipe calls for cinnamon chips. The ones I used were made by Hershey’s. I found them in the baking aisle at my grocery store — right next to the chocolate chips.
While they were baking my house smelled wonderful! So cinnamon-y!
So, as soon as these puppies came out of the oven (20 minutes exactly for me!), I dove right in. They were perfect! A nice crust on the outside and warm and soft on the inside. It was everything I wanted in a scone. Plus, they were super cinnamon-y! Bliss! I highly recommend this recipe!
