They say that a great hostess makes her guests feel right at home and gives the impression that nothing is too much trouble for her guests. This is Jill.
It was a simple cookout. The kids swimming in the pool. Hot dogs and hamburgers on the grill. Big wedges of watermelon on the table. And, corn on the cob. A perfect, warm June evening.
Now, back to the corn. To me, nothing says summer like corn on the cob (COTC). For as long as I can remember, it has been my favorite summer food. My mom always tells this story about a cookout my family went to when I was 3. Apparently, I ate thirteen ears of COTC that day. Yes, that’s right. Thirteen. I told you I loved corn! However, I have learned to limit myself to one or two these days. But COTC is definitely on my list of 10 favorite foods!
I always make it very simply — boiled with a pinch of sugar and then dripping in butter with plenty of salt and pepper. Usually, I’m not a big fan of salt. But COTC requires a good dose of the stuff!
Jill’s way of making COTC was also simple. But it took the flavor to a whole new level!
First, she boiled the COTC for a few minutes, making it tender. Once she removes the corn from the water, she puts on a sprinkling of salt and pepper and then evenly coats the ear with a clove of fresh, minced garlic. The last step is wrap the COTC up in aluminum foil and put it on a medium-high grill to finish cooking for a few minutes.
When it’s done, add a coating of butter and enjoy!

I’ll never make my plain old COTC again. This was to die for! And, wait until you see her kid-friendly way of buttering COTC! Sheer brilliance! Simply wrap a slice of plain bread around a stick of butter. You have an instant holder for your butter that you can just toss when you’re done! So simple and so very kid-friendly!
As I sat there with my belly full of comforting cook-out fare, listening to the kids playing, feeling the warm evening breeze, I thought to myself, “this is what summer is all about.” Good food. Good friends. Good memories.
So thank you, Jill. We had a great time tonight. You are the perfect hostess and a very special friend! Plus, you make a mean COTC!
