While I enjoy the long, lazy summer days, it’s the cool, crisp days of fall that I really crave! I wait all year long to enjoy the few short weeks, where the mountains are covered in orange, yellow and red patches and the days are cool and sunny. You know…when you need to wear a sweatshirt but you can still get a sun burn!
This was the perfect autumn weekend! Bright sun, colorful leaves, two whole days with nothing to do but visit the pumpkin patch and the apple orchard! Bliss!
This weather always inspires me to cook and bake! And, since we had just left the Ritter’s Cider Mill with all of our favorite finds (buckets of Jona Gold, Macoun and Gala apples, apple cider donuts and, of course, apple cider), I wanted to find some new apple recipes.
I came across this recipe in a Taste of Home magazine. It looked easy and sounded delicious. So I pulled it out of the pile and gave it a try!
1 1/3 cups apples, peeled and chopped
1/3 cup walnuts, chopped
1/3 cup raisins
1/2 cup sugar, divided
2 Tbsp flour
2 tsp cinnamon, divided
1/4 tsp salt
1 pkg (17.3 oz) large refrigerated flaky biscuits
2 tsp butter, melted
In a large microwave safe bowl, combine apples, walnuts, raisins, 3 Tbsp sugar, flour, 3/4 tsp cinnamon and salt. Microwave on high for 2-3 minutes or until almost tender.
Flatten each biscuit into a 5 inch disc. Combine remaining sugar and cinnamon; sprinkle a rounded teaspoonful of cinnamon-sugar mixture over each biscuit. Top with 1/4 cup of apple mixture. Bring up edges of biscuit to form a pouch and pinch closed.
Place seam side down in an ungreased muffin tin. Brush tops with butter; sprinkle with remaining sugar mixture. With a sharp knife, cut an “X” in the top of each biscuit.
Bake at 350 degrees for 18-22 minutes or until golden brown. Cool for 5 minutes before removing from pan. Cool on a wire rack.
Is it a Keeper?
These were a PERFECT dessert to round out a PERFECT weekend! I love the way the warm biscuit was buttery and chewy and, nestled inside was the sweet apple filling! And, they were so easy to assemble — you could do it assembly-line-style! Easy and delicious. Does it get better than that?
Next time (and believe me, there will be a next time), I think I will add a little freshly grated nutmeg. And, I think I’ll make a sugar glaze to drizzle on top…or maybe some caramel…hmmmm…..maybe BOTH!
