I made not one, but two(!) turkeys for Thanksgiving. My butcher suggested that I make two smaller birds, rather than one large bird. His reasoning? Well, first, they would cook faster since they are smaller. And, second, more white meat (or dark meat, depending on what you like). It makes sense, doesn’t it?!?
I’ve been doing this for the past few years and I have to say that I prefer making the two turkeys. Once, again my butcher has provided sage advice!
This year, I had 21 people for dinner and I still have a LOT of left over turkey. I always seem to over-estimate how much everyone will eat. But, I guess it’s better to have too much, than not enough. Right?!?
Now that we’ve had our fill of turkey sandwiches and reheated leftovers, I got to thinking what could I make with those leftovers? So, I went back and found my favorite recipes that called for cooked chicken and decided to substitute turkey! Here are some of my favorites (click on the photo for the recipe):
I’m also planning on making a cream of turkey soup tomorrow night for dinner…I’ll let you know how I make out!
