We all have them. You know…those days when you’ve got a million things going on, you’re running late and you haven’t even thought about what to have for dinner.
Well, that was my day. So, it only makes sense to test out a new recipe…right? Riiiiiight!
Call me crazy. But I like to think of it as a testament to my dedication to It’s A Keeper! Originally, I think this recipe came from an old issue of Cooking Light magazine.
1/4 cup honey
2 tablespoons Dijon mustard
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
4 (4-ounce) boneless center-cut loin pork chops (about 1/2 inch thick)
Salt and pepper to taste
Combine honey, mustard and spices in a bowl.
Heat a large nonstick skillet over medium heat and coat with cooking spray. Sprinkle pork with salt and pepper; cook 2 minutes on each side or until browned. Reduce heat to medium-low and add honey mixture. Cook for another 10 minutes or pork is cooked through, turning once.
Is it a Keeper?
This recipe got mixed reviews. I liked it. The husband…not so much. But, he’s not a fan of cloves and ginger. I thought the glaze was fantastic. The spices gave it a lot of flavor. And, you can beat the simplicity of this recipe! It only took about 15 minutes to make! 15 minutes. Seriously! So, if you’re looking for a new way to make pork chops in under 20 minutes, this is the recipe to try!
These chops would be great served with some brown rice and glazed carrots!
