Filet Mignon with a Mushroom Sherry Cream SauceThe other night, my husband and I went out with some great friends to one of our favorite restaurants, the Cafe Rinaldi in Old Forge, PA.   Their food is absolutely fantastic!  I find that I never order off the menu – I always get a special.  And this night was no different.

I ordered Pasta Mignon.  It sounded good…filet mignon served with pasta and a mushroom-sherry cream sauce.  Sounds good, right?!  Well, let me tell you…it was unbelievably delicious!  My mouth is watering just thinking about it! (more…)

Chicken Cannelloni with Roasted Red Pepper SauceSo the weather’s getting cooler here in northeastern Pennsylvania and that means it’s time for things like football, the cider mill and warm comforting casseroles!  I sifted through “the pile” and came up with a couple of contenders for dinner tonight — Chicken Cobbler Casserole and Chicken Cannelloni with Roasted Red Pepper Sauce.

I decided to go with the cannelloni tonight, but, rest assured, the Chicken Cobbler will be tried and tested by my fearless taste-testers very soon! (more…)

Chicken CacciatoreMy son loves Chicken Catch-en-torry!  And, I love to make it.  This is one of those recipes that tastes like it simmered all day, when in reality, it’s done in about 3o minutes!

I love the sweetness of the tomatoes and the tenderness of the chicken.  And, you definitely need some good garlic bread to sop up the extra sauce!

This is one of my family’s favorite dinners!  I hope that it becomes one of your family’s favorites too! (more…)

Spaghetti with LentilsMy Aunt Tina was a great inspiration to me.  She taught me so many things.  This recipe was one of my favorite recipes that she used to make.  It’s a hearty meatless dish that’s easy to make.

Sadly, we lost my Aunt to cancer in October 2009.  Words cannot explain how much I miss her.  But making her recipes makes me feel closer to her.   I dedicated our second cookbook, Inspirations!, to my Aunt Tina — she holds a very special place in my heart.
