Chocolate Eclair CakeHello.  My name is Christina and I’m addicted to recipes.  I can’t seem to stop clipping, printing, and scrawling ingredients and instructions down on napkins.    I’ve always loved recipes.  In fact, for my bridal shower, my sister sent blank recipe cards to all of my guests and asked them to share their favorite recipe with me.  I started my new marriage with over 70 tried and true favorite recipes from all of my friends and family.  What a treasure!

The other day, I needed to take a dessert to a party I was going to.  And, even though my husband was BEGGING me to make a chocolate peanut butter pie, I wanted to make something a little bit lighter.  I started flipping through my recipe boxes — all four of them — and came across this recipe for Chocolate Eclair Cake.   It was one of the recipes I received at my shower (my sister used very distinct recipe cards so I could easily tell that’s where it came from).

I hadn’t had this dessert in a very long time, so I thought I would give it a whirl!

Beef Bourguignon

We’re Moving!

This past week, It’s a Keeper celebrated its first birthday!  This was a huge milestone for me.  First, it meant that I managed to stick with this project for an entire year (I’m amazed at my commitment)!  Second, it meant that it was time to shake things up a little. Soooooo…..today’s the big day!  It’s a Keeper is moving to its new home — www.everydaytastes.com!

There are a lot of new great features on the new site!  I hope you’ll stop by and say, “Hi!”.

Breakfast Couscous

breakfast couscousI love cooking.  That’s why I have this blog.  I love to cook.  And bake (sometimes).  Homemade pasta…I’m your (wo)man.  Complicated sauces…bring it!  Roasting, braising, canning and stewing…now you’re talking!  Breakfast…eh.    Yeah, just eh.

See, mornings are not my friend.  Never have been.  Growing up, my sister was one of those chipper morning people.  Man, that bugged me.  Happy and chattering away while all I wanted was some quiet time to wake up.  Slowly.  Preferably with a nice big cup of steaming hot coffee.   I’m just not one of  “those morning people“.

So, you won’t see me bouncing out of bed, with little blue birds on my window sill waiting to bring me my bathrobe, so I can hurry to the kitchen and whip up a scrumptious breakfast for my family.  Nice thought.  But just not happening.

Don’t get me wrong.  I LOVE breakfast!  Especially when someone else makes it for me.  I even like to cook breakfast.  But it has to be on my terms.  I’m always on the lookout for breakfast dishes that can either be assembled ahead of time or require little prep time.

Now, I don’t have a good track record testing breakfast dishes on this blog.  Remember the Slow Cooker Breakfast Casserole I tried a while back?  Or, the Overnight Mush Oatmeal?  Both were great in theory but total flops in the end.  Kinda hurt my ego.  Which is why I’ve stuck with my faithful Scrambled Egg Brunch Bread, Raspberry French Toast Bake and my great-grandmother’s pancake recipe.  I know they work and I can pre-assemble them so my morning hands-on time is minimal.

I came across this recipe for Breakfast Couscous.  It sounded pretty good.  I love oatmeal and this seemed very similar, only easier.  So I sucked up my ego and gave breakfast another whirl. Continue Reading »
