Chocolate Eclair CakeHello.  My name is Christina and I’m addicted to recipes.  I can’t seem to stop clipping, printing, and scrawling ingredients and instructions down on napkins.    I’ve always loved recipes.  In fact, for my bridal shower, my sister sent blank recipe cards to all of my guests and asked them to share their favorite recipe with me.  I started my new marriage with over 70 tried and true favorite recipes from all of my friends and family.  What a treasure!

The other day, I needed to take a dessert to a party I was going to.  And, even though my husband was BEGGING me to make a chocolate peanut butter pie, I wanted to make something a little bit lighter.  I started flipping through my recipe boxes — all four of them — and came across this recipe for Chocolate Eclair Cake.   It was one of the recipes I received at my shower (my sister used very distinct recipe cards so I could easily tell that’s where it came from).

I hadn’t had this dessert in a very long time, so I thought I would give it a whirl!

Apple Cake

Apple CakeI found this recipe in the pile, scrawled on the back of a greeting card envelope!  Thinking back, I believe it was one of my mother’s recipes and I think she got it from her neighbor, years and years ago. I was looking to make some thing homey and I had a few apples that I wanted to use up so this was a perfect candidate! (more…)

It’s so exciting to be featured on someone else’s blog.  It kind of validates what I’m doing…sort of like an affirmation that people (other than my family members that I harass to read my posts) are actually reading what I have to say! When I came across this recipe in my in-box, I don’t know what I liked better — the “cinnamon pear” part or the “bruschetta” part!  Put both of those things together and it sounded like bliss!   The recipe came from The Pioneer Woman blog — if you’ve never checked it out, I highly recommend it!  She does a great job — great recipes (like this one!), great photos, just plain awesome! Easy Pumpkin MuffinsThe other day, my MIL (mother-in-law for those of you that don’t speak in acronyms!) made a batch of these easy pumpkin muffins.  The recipe came from a friend of hers that goes to Weight Watchers.  According to the friend, these muffins are only 1 WW point each!  Not too bad!  And, who doesn’t love a recipe that only calls for 3 ingredients?!?!  Plus, this recipe is a great way to use up extra pumpkin that you have after the holidays!
