Zucchini CookiesMy grandmother makes the BEST zucchini cookies!  I know that some of you are thinking, “Ewww…zucchini cookies.  Seriously?!?”.

Seriously!  These are the BEST zucchini cookies!  In fact, if you didn’t know it was in there, you probably wouldn’t even notice the zucchini.  You would just taste super moist cookies loaded with chocolate chips and walnuts.

My 92 year old grandmother baked dozens of these cookies this summer!  And, I was very grateful to be on the receiving end of her baking frenzy!  I hope you enjoy these cookies as much as we do! (more…)

Here’s an oldy but goody…Way back in 2003, I had my recipe for Mint Candy Cookies published in Quick Cooking magazine (now called Simple & Delicious).

The recipe was featured as a Valentine’s Day treat so I thought I would share this recipe again, as V. Day approaches.

This recipe is so simple, but so good!  It can also be adapted for any occasion — Christmas, Easter, bridal/baby showers, etc… Enjoy!
