Baked Spinach and Artichoke DipSome of my favorite food is what I call “football food”!  You know, those recipes that: (usually) don’t require silverware, can be eaten off of plate that is carefully balanced on your lap, requires some finger licking (OK, a lot of finger licking!) and tastes great when washed down with a refreshingly cold beverage.  Ahhh, football food….

Chocolate Eclair CakeHello.  My name is Christina and I’m addicted to recipes.  I can’t seem to stop clipping, printing, and scrawling ingredients and instructions down on napkins.    I’ve always loved recipes.  In fact, for my bridal shower, my sister sent blank recipe cards to all of my guests and asked them to share their favorite recipe with me.  I started my new marriage with over 70 tried and true favorite recipes from all of my friends and family.  What a treasure!

The other day, I needed to take a dessert to a party I was going to.  And, even though my husband was BEGGING me to make a chocolate peanut butter pie, I wanted to make something a little bit lighter.  I started flipping through my recipe boxes — all four of them — and came across this recipe for Chocolate Eclair Cake.   It was one of the recipes I received at my shower (my sister used very distinct recipe cards so I could easily tell that’s where it came from).

I hadn’t had this dessert in a very long time, so I thought I would give it a whirl!
